Ingredients
Shredded Chicken
- 1 pound boneless, skinless chicken breasts
- 10 ounces salsa homemade or store bought
- 1/2 cup water
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- 1 teaspoon granulated garlic powder
- 1 teaspoon ground coriander optional
- 1 teaspoon dried oregano optional
- 1/2 teaspoon cayenne pepper optional
- sea salt and cracked black pepper to your taste
Toppings
- salsa
- shredded cheese cheddar, cotija, blends
- crema or sour cream
- fresh cilantro
- Your favorite lettuce
- lime wedges

Instructions
- Add all of the ingredients under the shredded chicken list to your slow cooker.
- Set on low and cook for 6 hours. If you set your slow cooker on high these should be done in 4 hours.
- When the chicken is ready, carefully remove the lid off your slow cooker. Then carefully shred the chicken using 2 forks. This can be done either in the slow cooker, or in a separate bowl.
- If you removed the chicken, place it back in the slow cooker and cook on low for an additional 20 minutes.
- Serve with your favorite toppings, taco shells, lettuce wraps, or tortillas. This shredded chicken is great for a salad or grain bowl too!
