Shredded Chicken Tacos
These shredded chicken tacos are a set it and forget it kind of recipe. I used a slow cooker, but I bet you could also use an instant pot which would reduce the cook time.
boneless, skinless chicken breasts
homemade or store bought
granulated garlic powder
sea salt and cracked black pepper
to your taste
cheddar, cotija, blends
crema or sour cream
Your favorite lettuce
Add all of the ingredients under the shredded chicken list to your slow cooker.
Set on low and cook for 6 hours. If you set your slow cooker on high these should be done in 4 hours.
When the chicken is ready, carefully remove the lid off your slow cooker. Then carefully shred the chicken using 2 forks. This can be done either in the slow cooker, or in a separate bowl.
If you removed the chicken, place it back in the slow cooker and cook on low for an additional 20 minutes.
Serve with your favorite toppings, taco shells, lettuce wraps, or tortillas. This shredded chicken is great for a salad or grain bowl too!
